Making strong chai with CTC tea
What is CTC tea?
CTC stands for Crush, Tear, Curl, the method the leaf goes through on its way to the pack. What comes out is granules, not leaves: small and hard.
Why does CTC give a strong, full-bodied cup?
The leaf is crushed open to release its oils and torn for a stronger infusion. The granules that result are quick to give up their colour, which is what a cup with milk in it needs.
How much tea per cup?
The serving size on our packs is 3 g of tea per cup. Our brew method is one level teaspoon for each cup of chai you are making, and a little more if the household takes it strong.
How do you make chai with milk?
Take roughly half water and half milk. Bring the water to a rolling boil, add the tea, and give it two to three minutes to open up. Add milk and sugar to taste, bring it back to the boil once more, and let it simmer down to a deep, warm amber.
Strong CTC or Gold: which should you choose?
Both are CTC. Strong CTC Tea is the everyday cup: strong, full-bodied chai for the morning, the afternoon and every guest in between. Gold Tea is the premium cup: a premium quality CTC tea, 100% natural, for the chai you make a little more slowly.
