How Mann Ki Chai likes to be made

No rulebook — just the way chai is made in most Indian kitchens, so the first cup tastes right.

  1. 01 · Measure

    One level spoon a cup

    One level teaspoon for each cup of chai you are making — so about two spoons for two cups. A little more if the household takes it strong.

  2. 02 · Boil

    Water first, then the tea

    Take roughly half water and half milk. Bring the water to a rolling boil first, add the tea, and give it two to three minutes to open up before the milk goes in.

  3. 03 · Simmer

    Milk, sugar, patience

    Add milk and sugar to taste, bring it back to the boil once more, and let it simmer down to a deep, warm amber.
